My potatoes are almost ready to harvest. I’m eagerly awaiting the results. I’ve got Yukon golds and german butterballs in this year. The ideal seed potato is about the size of an egg. Uncut potatoes will yield more than cut potatoes. Traditionally, planting for potatoes is St. Patrick’s day, but in many areas a better yield will be had by waiting until later in the season. I planted mine in late May.We built the raised beds on the hospital rooftop in March and planted in April. This was my first year trying to grow potatoes; I started with two yukon gold potatoes from the grocery store, which I cut into cubes and sowed about 4 inches deep. I mounded soil on top of them as they began to grow. Yesterday I harvested about half of them and they were big, beautiful, and bountiful (easily 12 pounds yesterday), headed straight for the dinner table as a same-day-fresh potato salad. Next year I think I’ll try sweet potatoes.
